Quick and easy to make and perfect for the busy mornings, this exclusive gut friendly granola recipe is packed with healthy fats, fiber, and plant-based protein. Whether you’re topping your smoothie bowl or savouring it with a dollop of greek/coconut yogurt, this recipe will not only make you feel like a queen while savouring it, but also keep you feeling your best all day long.


Ingredients:

Dry ingredients:

  • ¾ cup raw almonds (chopped)
  • ¾ cup raw pecans (chopped)
  • ½ cup rar walnuts/hazelnuts (chopped)
  • ½ cup pumpkin seeds
  • ½ cup sunflower seeds
  • ½ coconut slices
  • ¼ cup flaxseeds
  • ½ tsp sea salt
  • 1 tsp ground cinnamon

Wet ingredients:

  • ¼ cup coconut oil (melted)
  • ¼ cup raw honey
  • 1 tsp vanilla extract

Optional additions:

  • ¼ cup dried cranberries (unsweetened) *add to an already baked granola
  • cacao nibs for a subtle, indulgent crunch
  • 1 tsp maca powder (for an extra boost)


Instructions:

1. Preheat the oven:
Set your oven to 150°C (roughly 300°F) and line a large baking sheet with parchment paper.

2. Mix the dry ingredients:
In a large mixing bowl, combine your chopped nuts (almonds, pecans and walnuts), seeds (pumpkin, sunflower, chia, hemp, flaxseeds), shredded coconut, sea salt, and cinnamon. Set aside.

3. Add the wet ingredients:
Add the ¼ cup coconut oil, ¼ cup raw honey and 1 tsp vanilla extract to a small saucepan and place over low heat to let the wet ingredients melt and mix together. Once done, pour over your dry ingredients and mix well until eve the dry ingredients are coated.

4. Bake to perfect crispiness:
Spread the seed & nut granola mixture evenly onto your prepared baking sheet. Bake for 30-35 minutes, stirring halfway through to ensure it bakes evenly and achieves that gorgeous golden-brown tone perfect for later Pinterest use. The scent of toasted nuts and coconut will fill your kitchen – pure bliss!

5. Cool and add extras:
Remove from the oven and place the sheet with granola on a cooling rack to let it cool down and prevent from “sweating.” This is where it gets delightfully crunchy. If you’re adding the cranberries, or cacao nibs throw them onto the cooling granola, so they have time to stick together.

6. Store and enjoy:
Transfer the cooled granola into an airtight container and store it at room temperature. It will stay fresh for up to two weeks, but let’s be honest – you’ll finish it much sooner!
